carb setup after rebuild

having just rebuilt a 6 50 twin motor with twin carbs , fishing for ideas or feelings with regards to setting up after a complete strip down. is it best to stick to service manual carb settings or jet up or down to run the engine in.?

I'm no expert Chaz and still have a bit of tinkering to do on my Rocket carb to get a reliable tickover ( probably never going to be as good as the Flash)

However today's fuel does seem to result in a rich looking plug - sooty but that could be additives
So I would think you should be safe enough with factory settings for running in, if worried lift the needle a notch and screw the pilot jet in just a tad for the first run then check.
More experienced Amalites will probably give you the benefit of their findings

 G'day chaz, a new motor does like to be a bit rich to run in. The easiest way is to lift the float height a mm or two, easy with the new stay up floats. That will richen it across the range. Then drop'em back down after a few hundred miles.
 I used an old bowl plug with a small tube fitting and clear hose to test the height, and marked the bowl with high and low marks.

 Having just re-built it the plugs will look sooty till the rings bed in.
